Every Saturday, before dawn, we’re on the floor at Billingsgate Fish Market choosing bream fish by fish. Wild vs Farmed Sea Bream
As with sea bass, both exist — and the honest answer matters more than the marketing.
Farmed (Mediterranean) Bream
The overwhelming majority of sea bream sold in the UK — including at Billingsgate — is farmed in the warm waters of the Mediterranean, principally Greece and Turkey. And it’s genuinely good fish: consistent plate-sized portions, mild sweet flavour, dependable quality all year round, and honest value.
Farmed bream is the everyday workhorse of Mediterranean kitchens, and there’s no snobbery about it there — nor should there be here.
Wild Sea Bream
Wild bream — including the prized gilt-head — appears at market seasonally and in much smaller numbers. It tends to be larger, leaner and firmer, with a deeper flavour, and it commands a premium price when it’s available.
If wild bream passes our inspection on a Saturday morning, you’ll see it on that week’s WhatsApp list. Either way, what we sell you is fresh — that’s the part that matters most on the plate.

They share the counter, the menu and most of the same cooking methods — so which should you order this week? The honest answer: it depends what you’re after.
Choose bream when…
You want a slightly sweeter, more robust flavour with broader, meatier flakes; you’re cooking one plate-sized whole fish per person; you’re grilling or barbecuing and want something forgiving; or you’re watching the budget — bream typically comes in a touch friendlier than bass for the same freshness.
It’s also the classic choice for the Turkish table: çipura off the grill with sumac onions is hard to argue with.
Choose bass when…
You want the finest, most delicate texture and a subtler flavour; you’re serving guests something with a touch more restaurant polish; or you’re after a larger single fish to carve at the table — bass runs bigger more often than plate-sized bream.

Bream is the perfect single-serving whole fish: a 400–600g çipura is one generous plate. Feeding four? Order four — they cook side by side in the same time.
Whole or filleted
Whole on the bone is moister, more dramatic and easier to judge for freshness; fillets are faster on a weeknight. We prepare either to order — and we’ll score a whole fish ready for the grill if you ask.

How To Cook Sea Bream
Bream is one of the most forgiving fish you can cook. Four reliable methods — pick yours.
Sea Bream on the BBQ
Score the skin, oil and season well, and grill a whole bream over medium-high coals for roughly 5–7 minutes per side. The skin crisps and chars while the sweet flesh steams gently on the bone. One of the very best fish for the BBQ.
Under the Kitchen Grill
No coals? A hot kitchen grill does a fine job: 6–8 minutes per side for a whole fish, skin brushed with oil, until charred at the edges and opaque at the bone. Finish with lemon and flaky salt.
Whole Roasted Sea Bream
The reliable classic. Stuff the cavity with lemon, garlic and herbs, oil and salt the skin, and roast at 200°C for 20–25 minutes for a typical 400–600g fish, until the flesh lifts cleanly from the bone. The method mirrors our whole sea bass guide — the two fish cook almost identically.
Air-Fryer Sea Bream
Plate-sized bream fits an air fryer basket perfectly. Cook at 190°C for around 12–15 minutes — crisp skin, moist flesh, minimal washing up. A brilliant midweek route to a whole-fish dinner.

Whole grilled bream with rocket, sumac onions, grilled peppers and lemon — simple, generous and true to how this fish is loved on the Aegean coast.
Mediterranean tray bake
Roast a whole bream over potatoes, cherry tomatoes, olives and oregano — the juices season the vegetables as everything cooks in one tray.
Salt-crusted bream
Bake the whole fish in a salt crust at 200°C (about 20 minutes for a plate-sized fish) and crack it open at the table — theatrical, and the moistest bream you’ll ever eat.
Bream with garlic butter
Pan-fry fillets skin-side down until crisp, then baste with garlic butter, parsley and a squeeze of lemon. Ten minutes, start to finish.
