The House O Fish standard
Why Our Salmon Is Different
Salmon is everywhere — on every supermarket shelf, in every meal deal. Ours is different because of how it’s bought, cut and delivered.
Hand-selected at Billingsgate
Every side and fillet of salmon we sell is chosen by hand at Billingsgate Fish Market — deep colour, firm flesh, clean cut, fresh sea smell. If it isn’t right that morning, we don’t buy it.
Premium grade, genuinely fresh
We buy premium salmon the same week we deliver. No long shelf life, no tired supermarket fillets sweating in plastic — just properly fresh fish, cold-packed and delivered fast.
Cut and prepared to order
Whole side, portioned darnes, skin-on fillets, pin-boned and ready for the pan — tell us how you’d like your salmon and it arrives exactly so.
A fishmonger who advises
Order through WhatsApp and ask us anything — how much for six people, which cut for the BBQ, how to get the skin crisp. Real advice from people who handle fish every week.
Scottish Salmon
Scottish salmon has earned its reputation as one of the world’s finest — prized for its rich colour, firm texture and clean, full flavour, shaped by the cold, clear waters of Scotland’s coast. It’s a mainstay of the best fishmongers and a regular at Billingsgate.
Origins on the market shift from week to week, so we’ll always tell you exactly what we have when you order. What never changes is the standard: whatever salmon we sell is hand-picked fresh that Saturday morning, cut to your order and delivered across London. Read more about our Billingsgate fish delivery.
Taste & Texture
Rich, clean and subtly buttery, with a silky, tender texture that flakes into moist, generous pieces. Its natural oils keep it succulent and forgiving — which is exactly why salmon suits every method from the grill to the air fryer.
A balanced view
Fresh vs Frozen Salmon
Frozen salmon isn’t the enemy — but for flavour, texture and that perfect crisp skin, fresh has the edge. Here’s the honest comparison.
When fresh wins
Fresh salmon, bought and delivered the same week and cooked within a day or two, gives you the finest silky texture, the cleanest flavour and the best crisp skin. It’s the difference you notice most in simple cooking — a pan-fried fillet or a whole roasted side, where the quality of the fish has nowhere to hide.
This is where a hand-selected, market-fresh salmon truly shines, and it’s exactly what we deliver.
When frozen makes sense
Salmon frozen quickly and properly can be very good, and it’s undeniably convenient — handy to keep in the freezer for a spontaneous dinner, and a way to reduce waste. Defrost it gently in the fridge and it cooks up perfectly well.
The deciding factor, as ever, is freshness and handling rather than the label. Our focus is simply on delivering salmon at its fresh best.
A nutritional powerhouse
Nutrition & Omega-3
Few foods pack as much genuine goodness into something this delicious. Salmon is a nutritional heavyweight.
Rich in omega-3
Salmon is one of the best dietary sources of long-chain omega-3 fatty acids (EPA and DHA), the healthy fats associated with supporting heart and brain health as part of a balanced diet.
High-quality protein
A generous source of complete, high-quality protein to support muscle, recovery and everyday energy — satisfying without being heavy.
Vitamin D & B vitamins
Salmon provides vitamin D — which many of us lack, especially in a London winter — along with B vitamins including B12 for energy and nervous-system health.
Minerals like selenium
It also delivers minerals such as selenium and potassium, rounding out one of the most nutrient-dense choices you can put on a plate.
Health guidance often suggests eating oily fish such as salmon regularly — making a weekly delivery an easy, delicious way to eat well. Learn how to pick the freshest fish in our guide to how to choose fresh fish.
From our kitchen
How To Cook Salmon
Salmon’s natural oils make it wonderfully forgiving. Four reliable methods — pick yours.
Salmon on the BBQ
Salmon is superb over fire. Grill skin-side down over medium heat for 4–5 minutes to crisp the skin, then finish briefly flesh-side, or wrap a whole side in foil with lemon and dill for effortless flaky results. See our guide to the best fish for BBQ.
Oven-Baked Salmon
The easy, reliable route. Roast fillets or a whole side at 180–200°C for 12–18 minutes depending on thickness, until just opaque and flaking. A whole side with lemon, garlic and herbs makes a stunning, low-effort centrepiece.
Air-Fryer Salmon
Fast and foolproof. Cook salmon fillets at 190°C for around 8–10 minutes for crisp edges and a moist middle — one of the quickest premium dinners going, with almost no washing up.
Pan-Fried Salmon
For the best crispy skin. Dry the fillet, season, and lay it skin-side down in a hot oiled pan; press gently and cook 4–5 minutes until the skin is crisp and the flesh has turned opaque most of the way up, then just a minute on the flesh side.
Ideas to try
Salmon Recipes
Four of our favourite ways to serve it, from a ten-minute weeknight fillet to a whole side for a crowd.
Crispy-skin salmon & greens
Pan-fried skin-side down until shatteringly crisp, served on garlicky greens with a squeeze of lemon — a ten-minute dinner that eats like a restaurant plate.
Whole roasted side
A whole side roasted with lemon, dill and a little butter — carve at the table for an effortless centrepiece that feeds a crowd.
Honey & mustard glaze
Brush fillets with honey, mustard and a touch of soy, then bake or air-fry until sticky and caramelised at the edges.
Foil-wrapped BBQ salmon
A whole side wrapped in foil with lemon, herbs and butter, cooked gently on the BBQ until it flakes — no sticking, no fuss, all flavour.
Building a mixed order? Pair salmon with a delicate sea bass or a sweet sea bream, add bold anchovies (hamsi), or ask about meaty monkfish this week. New to ordering? Start at our online fish shop London page.
Buying well
Choosing Your Cut of Salmon
Salmon is one of the most versatile fish to buy because it comes in so many forms. Here’s how to choose the right cut — we’ll prepare any of them to order.
Whole side
A whole side of salmon is the ultimate centrepiece — roast it, glaze it or wrap it for the BBQ, then carve at the table. A typical side of around 1–1.2kg feeds about six generously.
Fillets & portions
Even, skin-on portions are the everyday hero — quick to cook, easy to serve, perfect for pan-frying or the air fryer. Allow 150–200g per person and we’ll cut them evenly.
Darnes (steaks)
Cut across the bone, salmon darnes hold their shape beautifully on the grill or in a tray bake and make a satisfying, meaty portion with lovely presentation.
Skin-on for crisp skin
Ask for skin-on, pin-boned fillets if you love crackling-crisp salmon skin — it protects the flesh as it cooks and turns irresistibly crunchy in a hot pan. Learn what fresh looks like in how to choose fresh fish.
For every occasion
Salmon For Any Table
Part of why salmon is so loved is how easily it moves from midweek supper to special occasion.
Quick weeknight dinners
A salmon fillet in the air fryer or pan is on the table in ten minutes — premium food with zero fuss on a busy evening.
Feeding a crowd
A whole roasted side is the easiest way to feed six or more impressively — minimal effort, maximum table appeal, hot or cold.
Special occasions
Glazed, roasted whole or served as an elegant main, salmon brings a sense of occasion to Sunday lunch, celebrations and dinner parties alike.
Healthy meal prep
Bake a batch of fillets for the week ahead — flaked into salads, grain bowls and pasta, salmon makes eating well genuinely easy.
